How to re-freeze meat that's been defrosted?

A common misconception is that you should never, ever, re-freeze your meat after it’s been defrosted.

Actually, it's perfectly safe to re-freeze your meat as long as you do it correctly.

Re-frozen meat might not be quite as tasty as meat that's only been frozen once.

That's because when it's refrozen, the meat will create more ice crystals within its cells. These tiny crystals rupture the tissue of the meat on a microscopic level and cause it to lose moisture when it's next defrosted.

You can only re-freeze meat if meets these criteria:

Meat has been defrosted in a fridge, set to the correct temperature (4°C), and is still in its airtight packaging.

No

If the meat's been defrosted it in cold water, never re-freeze it.

If the meat's been exposed to the air, never re-freeze it.
